Prepare the Slaw
In another bowl, mix the green cabbage, carrots, mayonnaise, apple cider vinegar, salt, and pepper. Toss until well combined and set aside.

Cook the Salmon
Rub the salmon fillets with olive oil and season with blackening seasoning. Preheat a grill or skillet over medium-high heat. Cook the salmon for about 4-5 minutes on each side until cooked through and flaky. Alternatively, for grilled salmon, cook without the blackening seasoning for a lighter flavor.

Cook the Green Beans
In a pot, bring water to a boil and add the green beans. Cook for about 3-5 minutes until tender-crisp. Drain and season with salt and pepper.

Serve
Place the grilled or blackened salmon on plates, top with mango salsa, and serve with slaw and green beans on the side.
