Make the Base Mixture
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk Sugar and Egg Yolks
In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is smooth and pale in color.

Cook the Base
Return the combined mixture to the saucepan over medium heat. Cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

Add Flavoring
Remove the saucepan from heat. Stir in the vanilla extract. Let the base cool to room temperature, then refrigerate for at least 4 hours or overnight.

Once the base is chilled, divide it into separate bowls based on your flavor choices.

For chocolate gelato, whisk in the cocoa powder until fully incorporated. For strawberry, add the pureed strawberries. For pistachio, mix in the chopped pistachios. For mint, stir in the finely chopped mint leaves.

Pour the flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions until thick and creamy.
