Burger Preparation

Prepare Flaxseed Mixture
In a small bowl, combine the ground flaxseed and water. Stir well and let it sit for about 10 minutes until it thickens. This will act as a binding agent.

Sauté Vegetables
In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 5-7 minutes or until the vegetables are soft.

Mash Black Beans
In a large mixing bowl, add the drained black beans. Using a fork or a potato masher, mash the beans until mostly smooth, leaving some chunks for texture.

Combine Ingredients
To the mashed black beans, add the cooked quinoa, sautéed vegetables, cumin, chili powder, salt, black pepper, breadcrumbs, and the prepared flaxseed mixture. Mix everything until well combined.

Shape Patties
Using your hands, form the mixture into burger patties (about 4-6 depending on your preferred size).

Cook Patties
In the same skillet, add another tablespoon of olive oil. Heat over medium heat and cook the patties for about 4-5 minutes on each side or until they are golden brown and heated through.

Serve the veggie burgers on a bun topped with mixed greens, sliced tomatoes, and a drizzle of sriracha to taste.
