Preheat your oven to 180°C (350°F). Spread the tortilla chips evenly on a large baking sheet.

In a glass, add the fresh mint leaves and juice of half the lime. Muddle together using a muddler or the back of a spoon to release the mint oils and lime juice.

Add 100 ml of strawberry-flavored syrup and 250 ml of mango juice to the wine mixture. Stir until fully combined.

Slice the strawberries, orange, lemon, and lime, and dice the mango. Add all the fruits to the pitcher with the wine mixture.

Gently stir in 1 cup of mint leaves for added freshness.

Just before serving, add 500 ml of club soda and 2 cups of ice cubes to the pitcher. Stir gently to combine.

Wash the Malbec grapes thoroughly to remove any dirt or pesticides.

Prepare the Grapes

Crush the grapes in a clean fermentation vessel to release the juices. You can use your hands, a potato masher, or a grape crusher.

Add 500 ml of water and 200 g of sugar to the crushed grapes in the fermentation vessel, stirring well until the sugar is dissolved.

Sprinkle 5 g of wine yeast over the mixture. Stir gently to incorporate the yeast.

Seal the fermentation vessel with an airlock to allow gases to escape while preventing contamination.

Let the mixture ferment for about 7-14 days at a consistent temperature of around 20-25°C (68-77°F). Check the specific gravity with a hydrometer daily.

Once fermentation is complete (specific gravity remains stable), siphon the wine off the sediment into a clean vessel, leaving the sediment behind.

If desired, add 1 g of tannin to the siphoned wine for added complexity.

Allow the wine to age in a cool, dark place for at least 3-6 months for better flavor development.

Clean and sanitize your bottles and caps.

Cork or cap the bottles securely and store them upright for a week, then store them on their side.

Harvest the Pinot Noir grapes when they are fully ripe, typically in late summer to early fall, depending on the climate and region. Ensure the grapes are free from rot and pests.

Harvesting the Grapes

Place the harvested grapes into a crusher/destemmer. Crush the grapes to release their juice, while removing the stems to prevent bitterness in the wine.

Crushing and Destemming

Transfer the crushed grapes and juice into a fermentation vessel. Sprinkle the red wine yeast over the top and allow it to ferment at a controlled temperature (around 24-28°C) for about 7-10 days. Monitor the fermentation process for bubbles and taste the juice daily.

After primary fermentation is complete, press the fermented mixture to separate the juice from the solids (skins and seeds). Use a wine press for this process.

Pressing

Transfer the pressed juice into another fermentation vessel for secondary fermentation. This can take several weeks to a few months. At this stage, add sulfites if desired to preserve the wine.

Secondary Fermentation

Once secondary fermentation is complete, rack the wine into a clean vessel, leaving sediment behind. This process may be repeated several times over a few months.

Racking

Transfer the wine into oak barrels or stainless steel tanks for aging. Age the wine for at least 6-12 months, tasting periodically to monitor its development.

Once the wine has aged to your satisfaction, it's time to bottle it. Use sanitized bottles and corks to prevent contamination. Fill each bottle, leaving a small space at the top, and cork them securely.

Allow the bottled wine to rest for a few weeks before enjoying. Serve at a temperature of 14-16°C in a wine glass and enjoy the complex flavors of your homemade Mark West Pinot Noir.

Place the bottle of Josh Cellars Cabernet Sauvignon in the refrigerator for at least 2 hours before serving to ensure it is well chilled.

Take a wine glass and fill it with ice cubes, ensuring that the ice fills the glass but does not overflow.

Carefully pour 750 ml of the chilled Josh Cellars Cabernet Sauvignon over the ice cubes in the glass, allowing the wine to mix with the melting ice slightly.

Add 100 ml of water to the wine in the glass to dilute it slightly and enhance the flavor.

Garnish the drink with a fresh rosemary sprig and a lemon slice on the rim of the glass for added aroma and decoration.

In a small saucepan over medium heat, combine 50 ml of water and 50 grams of sugar. Stir until the sugar is completely dissolved. Remove from heat and let it cool.

Make the Simple Syrup

Wash and slice the fresh strawberries. Set aside in a bowl.

Prepare the Strawberries

Gently wash the mint leaves and pat them dry with a paper towel.

In a large pitcher, combine the 750 ml of rosé wine, 250 ml of sparkling water, and 50 ml of the cooled simple syrup.

Combine the Ingredients

Add the sliced strawberries, fresh mint leaves, and 30 ml of lemon juice to the pitcher. Stir gently to combine all ingredients.

Add Flavor Enhancements

Fill glasses with ice cubes to taste, then pour the prepared Seaglass Rosé mixture over the ice.

Serve the Drink

Top each glass with a slice of lemon for garnish and a sprig of mint if desired.

Add sulfur dioxide to stabilize the wine and prevent unwanted bacteria growth.
