Cooking the Tortellini

Boil the Tortellini
In a large pot, bring salted water to a boil. Add the cheese-filled tortellini and cook according to package instructions, usually about 3-5 minutes, until they float to the top. Drain and set aside.
Making the Vodka Sauce

Sauté Shallots and Garlic
In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallots and sauté for about 2-3 minutes until they are translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Add Tomato Sauce and Vodka
Pour in the tomato sauce and vodka, stirring to combine. Bring the mixture to a gentle simmer and cook for about 5 minutes, allowing the alcohol to cook off.

Incorporate Heavy Cream
Lower the heat and add the heavy cream to the skillet, stirring until the sauce is creamy and well combined. Let it simmer for another 3-4 minutes.

Add Cheese and Seasoning
Stir in the grated Parmesan cheese, chopped fresh basil, salt, and black pepper. Mix until the cheese is melted and the sauce is smooth.
Combining Tortellini and Sauce

Add the drained tortellini to the sauce, gently tossing to coat the pasta evenly. Cook for an additional 1-2 minutes until heated through. Serve hot, garnished with extra Parmesan and basil if desired.
