    Prepare the Stuffing

    In a skillet, heat the olive oil over medium heat. Add the chopped onion, celery, and minced garlic. Sauté until the vegetables are soft and translucent, about 5 minutes.

    Mix the Cornbread Stuffing

    In a large bowl, combine the sautéed vegetables with the crumbled cornbread, dried sage, dried thyme, chopped parsley, and chicken broth. Mix well until the cornbread absorbs the broth and the mixture is moist. Set aside.

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

    Stuff the Chicken

    Using a sharp knife, create a pocket in each chicken breast by slicing horizontally. Stuff each pocket generously with the cornbread stuffing mixture.

    Seal and Cook

    In an oven-safe skillet, melt the butter over medium heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F or 75°C).

    Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve warm with your choice of sides.
