Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for baking the potato skins.

Bake the Potatoes
Pierce each potato with a fork several times. Place them on a baking sheet and bake in the preheated oven for about 45-60 minutes, until they are tender when pierced with a fork.

Cut and Scoop
Once baked, let the potatoes cool slightly. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato on the skin.

Add Cheese and Bacon
Fill each potato skin with shredded cheddar cheese and crumbled bacon.

Bake Again
Place the filled potato skins back on the baking sheet and return to the oven. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Garnish
Remove the potato skins from the oven and sprinkle with chopped green onions.

Serve the loaded potato skins hot with a side of sour cream for dipping.
