Dough Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with a fork until the dough comes together.

Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

Prepare the Filling
In a large bowl, combine ground chicken, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.
Assembling Pot Stickers

Roll Out the Dough
After the dough has rested, divide it into small pieces, about the size of a golf ball. Roll each piece into a thin circle, about 3-4 inches in diameter.

Fill the Pot Stickers
Place about 1 tablespoon of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal. You can crimp the edges for a decorative touch.

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot.

Carefully add the pot stickers to the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown and crispy.
