In a large bowl, combine the peeled and deveined shrimp with salt, black pepper, and Cajun seasoning. Mix well to ensure the shrimp are evenly coated. Set aside to marinate for about 15 minutes.

In three separate shallow bowls, prepare the breading station: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, garlic powder, and paprika. Mix the breadcrumbs with the spices to evenly distribute.

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Bread the Shrimp
Take each shrimp, first dip it in the flour, shaking off the excess, then into the beaten eggs, and finally coat it in the panko mixture. Ensure each shrimp is fully coated.

Carefully place the breaded shrimp into the hot oil in batches, avoiding overcrowding the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, mix together the mayonnaise, finely chopped dill pickles, lemon juice, chopped capers, salt, and black pepper. Stir until well combined. Adjust seasoning to taste.
