Preparation

    Beat the Eggs

    In a mixing bowl, crack the eggs and whisk them together with salt and black pepper until fully combined.

    Prepare the Vegetables

    Dice the onion and tomato, and chop the spinach. If using bacon, turkey sausage, or ham, prepare them by cooking and crumbling or dicing as needed.

Cooking the Omelette

    Heat the Pan

    In a non-stick skillet, melt the butter over medium heat until it is fully melted and slightly bubbling.

    Add Vegetables

    Add the diced onion to the pan and sauté for 2-3 minutes until translucent. Then, add the chopped spinach and diced tomato, cooking for another 2 minutes until the spinach is wilted.

    Cook the Eggs

    Pour the beaten eggs over the sautéed vegetables in the skillet. Allow the eggs to sit for about 1 minute until they start to set around the edges.

    Add Cheese and Meat

    Sprinkle the shredded cheddar cheese and crumbled feta cheese evenly over one half of the omelette. If using, also add the cooked bacon, turkey sausage, or ham at this stage.

    Fold the Omelette

    Using a spatula, gently fold the omelette in half over the cheese and meat. Cook for another 2-3 minutes until the eggs are fully cooked through and the cheese has melted.

    Serve

    Carefully slide the omelette onto a plate. Optionally, garnish with additional herbs or cheese if desired. Serve hot.
