Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C) to ensure it is hot enough for roasting the chicken.

    Prepare the Chicken

    Remove the giblets from the chicken cavity and pat the chicken dry with paper towels. This will help the skin get crispy.

    Make the Herb Mixture

    In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, lemon zest, lemon juice, salt, and black pepper.

    Season the Chicken

    Rub the herb mixture all over the chicken, including under the skin and inside the cavity. Make sure it's well coated.

Roasting

    Prepare the Vegetables (optional)

    If using, toss the carrots, potatoes, and onion in a bit of olive oil and salt, then place them at the bottom of a roasting pan.

    Roast the Chicken

    Place the chicken breast-side up on top of the vegetables in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute.
