Preparing the Fish

Make the Batter
In a large mixing bowl, combine flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until you achieve a smooth batter consistency.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Cut the Potatoes
Peel and cut the russet potatoes into evenly sized fries, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

In a separate pot, heat 4 cups of oil to 350°F (175°C).

Carefully fry the soaked and drained fries in the hot oil for about 5-6 minutes or until golden and crispy. Remove and drain on paper towels. Season with salt to taste.

Combine the Ingredients
In a medium bowl, mix together mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir until well combined.
