Preparation of Eggplant

    Slice the Eggplant

    Slice the eggplants into 1/4 inch rounds and place them in a colander. Sprinkle salt over the slices to draw out moisture and bitterness. Let sit for about 30 minutes.

    Rinse and Dry

    After 30 minutes, rinse the eggplant slices under cold water to remove excess salt and moisture. Pat them dry with paper towels.

    Fry the Eggplant

    In a large skillet, heat 1/2 cup olive oil over medium heat. Fry the eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Add more oil as needed.

Preparing the Sauce

    Cook Garlic

    In a saucepan over medium heat, add the remaining 1/2 cup of olive oil. Add minced garlic and sauté until fragrant, about 2 minutes.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, oregano, basil, sugar, black pepper, and red pepper flakes. Bring to a simmer and reduce heat to low. Let it cook for about 20 minutes to develop flavors.

Assembling the Dish

    Layer the Ingredients

    Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of the tomato sauce, followed by a layer of fried eggplant, then a layer of mozzarella and parmesan cheese. Repeat layers until all ingredients are used, finishing with a layer of sauce and cheese on top.

    Bake

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Garnish and Serve

    Once baked, remove from oven and let it cool for a few minutes. Garnish with fresh basil before serving.
