Prepare the Eggplant Fries

Slice the Eggplant
Cut the eggplant into fry-shaped pieces, about 1/4 inch thick.

Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Set up the Breading Station
In three separate bowls, place the flour, beaten eggs, and breadcrumbs mixed with parmesan cheese, salt, and black pepper.

Bread the Eggplant Fries
Dip each eggplant piece into the flour, shaking off the excess, then into the beaten eggs, and finally coat in the breadcrumb mixture.

Arrange on Baking Sheet
Place the breaded eggplant fries on the prepared baking sheet in a single layer. Drizzle with olive oil.

Bake the Fries
Bake in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping halfway through.
Prepare the Marinara Sauce

Sauté the Garlic
In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Let the sauce simmer for about 10-15 minutes, stirring occasionally. If desired, add fresh basil towards the end of cooking.

Once the fries are baked, remove them from the oven and let them cool slightly before serving.
