Clam Strips

Method

Preparing the Clam Strips

  1. 1

    Clean the Clam Strips

Rinse the fresh clam strips under cold water and pat them dry with a paper towel.

  2. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the egg and milk until smooth.

  4. 4

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Coat the Clam Strips

Dip each clam strip into the wet mixture, allowing excess to drip off, then dredge in the dry mixture, ensuring they are well-coated.

  6. 6

    Fry the Clam Strips

Carefully place the coated clam strips in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes until golden brown and crispy.

  7. 7

    Drain the Clam Strips

Use a slotted spoon to remove the fried clam strips and place them on a plate lined with paper towels to drain excess oil.

Making the Tartar Sauce

  1. 8

    Combine Ingredients

In a small bowl, mix together the mayonnaise, finely chopped dill pickles, lemon juice, chopped capers, salt, and black pepper.

  2. 9

    Chill the Sauce

Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

  1. 10

    Plate the Clam Strips

Arrange the fried clam strips on a serving plate.

  2. 11

    Serve with Tartar Sauce

Serve the clam strips hot, accompanied by the chilled tartar sauce for dipping.
