Preparation
- 1
Prepare the Chicken
Start by placing the chicken breasts between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/2 inch thick for even cooking.
- 2
Season and Dredge
Season both sides of the chicken breasts with salt and black pepper. Dredge each piece in flour, shaking off the excess, then dip into beaten eggs, allowing excess to drip off.
Cooking
- 3
Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
- 4
Make the Sauce
In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet to incorporate any browned bits.
- 5
Finish the Sauce
Stir in the fresh lemon juice and chopped parsley. Let the sauce simmer for an additional 2-3 minutes to thicken slightly.
