Preparation
- 1
Cook the Pasta
In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Broccoli
In a separate pot, bring water to a boil. Add broccoli florets and blanch for about 3-4 minutes until vibrant green and tender-crisp. Drain and set aside.
- 3
Season and Cook the Chicken
Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Heat a grill or skillet over medium-high heat and add a tablespoon of butter. Grill the chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and allow to rest before slicing.
Making the Alfredo Sauce
- 4
- 5
Combine Cream and Cheese
Pour in the heavy cream, stirring to combine. Allow the mixture to simmer gently for about 2-3 minutes. Gradually whisk in the Parmesan cheese until melted and the sauce is smooth.
- 6
Season the Sauce
Season the Alfredo sauce with salt, black pepper, and additional Italian seasoning to taste. If the sauce is too thick, add a splash of pasta water to reach desired consistency.
Finishing the Dish
- 7
Combine Everything
Add the cooked penne pasta, broccoli, and sliced chicken to the Alfredo sauce. Toss gently to ensure everything is well coated in the sauce.
- 8
Serve
Divide the Chicken & Broccoli Alfredo among plates. Garnish with extra Parmesan cheese and freshly cracked black pepper if desired. Serve immediately.
