For the Boneless Wings

Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces and season with salt, black pepper, garlic powder, and onion powder. Set aside.

Prepare the Breading
In a bowl, whisk together the eggs and milk. In another bowl, mix the all-purpose flour and cornstarch.

Bread the Chicken
Dip each piece of chicken into the flour mixture, then into the egg mixture, and finally back into the flour mixture to coat thoroughly.

Fry the Chicken
Heat the oil in a deep skillet over medium-high heat. Once hot, fry the breaded chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Coat the Wings
In a large bowl, toss the cooked boneless wings with your choice of sauce until evenly coated.

Mix the Dressing
In a bowl, combine the blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy.
