Method

Cooking the Salmon

  1. 1

    Prepare the Salmon

Pat the salmon fillets dry with a paper towel and rub them with olive oil.

  2. 2

    Season the Salmon

Generously coat each salmon fillet with blackening seasoning on all sides.

  3. 3

    Cook the Salmon

Heat a skillet over medium-high heat. Once hot, add the salmon fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from heat and let rest for a few minutes.

Preparing the Salad

  1. 4

    Prepare the Vegetables

While the salmon is cooking, chop the cherry tomatoes in half, slice the red onion thinly, and dice the cucumber.

  2. 5

    Assemble the Salad

In a large bowl, combine the mixed greens, cherry tomatoes, red onion, black olives, and cucumber. Toss gently to mix.

Making the Dressing

  1. 6

    Combine Ingredients

In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and black pepper until well combined.

Serving

  1. 7

    Plate the Salad

Divide the mixed greens salad onto plates. Top each salad with the blackened salmon fillet.

  2. 8

    Drizzle with Dressing

Drizzle the balsamic vinaigrette dressing over the top of the salads and serve immediately.
