Method

Preparing the Birria

    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. Rinse them under cold water.

    Toast the Chiles

    In a dry skillet over medium heat, toast the chiles for about 2-3 minutes until fragrant. Be careful not to burn them.

    Blend the Sauce

    In a blender, add the toasted chiles, garlic, onion, cumin, oregano, salt, and black pepper with 1 cup of beef broth. Blend until smooth.

    Brown the Beef

    In a large pot, heat some oil over medium-high heat. Add the chuck roast or beef shank and brown on all sides.

    Combine Ingredients

    Add the blended chile sauce, the remaining beef broth, and bay leaves to the pot. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for about 2-3 hours, or until the meat is tender and easily shredded.

    Shred the Meat

    Once cooked, remove the meat and shred it using two forks. Return the shredded meat to the pot and mix with the sauce.

Preparing the Tacos

    Heat the Tortillas

    In a skillet, heat the corn tortillas one by one until warm and pliable.

    Fill the Tacos

    Add a generous amount of shredded birria meat and top with shredded cheese and chopped onions on each tortilla.

    Press the Tacos

    Fold the tortillas in half to form tacos and press down gently. You can also grill them in the skillet for a couple of minutes to melt the cheese.

Serving the Consome

    Prepare the Consome

    In a bowl, ladle the reserved cooking liquid from the birria as consome.

    Garnish

    Top the tacos with fresh cilantro before serving. Serve with the consome on the side for dipping.
