    Prepare the Potatoes

    In a large pot, bring salted water to a boil. Add breakfast potatoes and cook until fork-tender, about 10 minutes. Drain and set aside.

    Cook the Steak

    Season the flat iron steaks with salt, black pepper, garlic powder, and onion powder on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare or until your desired doneness. Remove from heat and let rest for 5 minutes.

    Cook the Eggs

    In the same skillet, add remaining olive oil if needed. Crack the eggs into the skillet and cook to your liking (sunny-side up, over easy, etc.), about 3-4 minutes.

    Prepare the Potatoes

    In a separate skillet, sauté the drained breakfast potatoes in a little olive oil over medium heat, seasoning with salt and pepper, until golden and crispy, about 5-7 minutes.

    Serve

    Plate the rested steak, topped with the cooked eggs, alongside the crispy breakfast potatoes. Garnish with fresh parsley and serve immediately.
