Directions
Prepare the Pulled Pork
In a slow cooker, combine the pork shoulder, garlic, oregano, cumin, salt, black pepper, and olive oil. Cook on low for 8 hours until the pork is tender and easily shredded.
Make the Dijon Mayo
In a small bowl, mix together the Dijon mustard and mayonnaise until well combined. Set aside.
Assemble the Sandwich
Slice the telera rolls in half. Spread a generous layer of the Dijon mayo on both sides of the roll. Layer with pulled pork, sliced ham, provolone cheese, spicy pickles, and red onion.
Grill the Sandwich
Heat a grill or sandwich press over medium heat. Place the assembled sandwiches on the grill and press down. Grill for about 4-5 minutes on each side until the bread is crispy and the cheese is melted.
Serve
Remove the sandwiches from the grill, slice in half, and serve immediately.
