Cook the Steak

Season the flat iron steak with salt and pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Prepare the Bacon

In a skillet, cook the bacon until crispy. Remove from skillet and place on paper towels to drain excess fat.

Hard Boil the Egg

Place the egg in boiling water for 9-10 minutes. Remove and place in cold water until cooled. Peel and slice.

Prepare the Salad Base

In a large bowl, combine spinach, arugula, sliced red onion, diced tomato, and crumbled Gorgonzola cheese.

Make the Citrus Balsamic Vinaigrette

In a small bowl, whisk together balsamic vinegar, olive oil, fresh orange juice, honey, salt, and black pepper until well combined.

Assemble the Salad

Slice the cooked steak and crumble the bacon. Add steak and bacon to the salad base. Top with sliced egg and garlic toast croutons. Drizzle salad with the vinaigrette and toss gently to combine.
