    Prepare the Sweet Potatoes

    Preheat the oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until tender and slightly caramelized. Set aside to cool.

    Sauté the Shrimp

    In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove from heat and let cool slightly.

    Prepare the Dressing

    In a small bowl, whisk together 1/4 cup of Greek yogurt, 2 tablespoons of lemon juice, 1 teaspoon of lemon pepper seasoning, and salt to taste. Adjust consistency with water if necessary.

    Assemble the Salad

    In a large bowl, combine watercress, spinach, roasted sweet potatoes, grapefruit segments, sautéed shrimp, toasted pistachios, and Gorgonzola cheese. Drizzle with the creamy lemon pepper dressing and toss gently to combine.
