Caramelize the Onions
Slice the onion thinly. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions, sprinkle with salt, and cook, stirring often, until they are golden brown and caramelized, about 15-20 minutes. Set aside.

Cook the Beef Patty
In the same skillet, increase the heat to medium-high. Form the ground beef into a patty, season with salt and pepper, and cook for 3-4 minutes on each side or until desired doneness is reached.

Assemble the Patty Melt
Spread Russian dressing on one side of each slice of rye bread. On two slices, layer Swiss cheese, the cooked beef patty, caramelized onions, cheddar cheese, and a slice of pickle. Top with the remaining slices of rye bread, dressing side down.

Grill the Sandwich
In the same skillet, melt the remaining tablespoon of butter. Place the assembled sandwiches in the skillet and grill over medium heat, about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Remove from the skillet, cut in half, and serve hot.
