Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
Combine Wet Ingredients
In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.
Mix Together
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
Add Optional Ingredients
If desired, fold in blueberries or chocolate chips into the batter.
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
Serve
Serve the pancakes warm with bacon or homemade sausage on the side.
