Oysters

Butter Mixture

Method

Preparation

  1. 1

    Clean the Oysters

Rinse the fresh oysters under cold running water to remove any sand or debris. Scrub the shells with a stiff brush to ensure they're clean.

  2. 2

    Prepare the Rock Salt Bed

In a large baking dish or tray, spread the rock salt evenly to create a base for the oysters. This will help stabilize them on the grill.

Butter Mixture

  1. 3

    Melt the Butter

In a small saucepan over low heat, melt the unsalted butter. Do not let it boil.

  2. 4

    Add Flavorings

Once melted, add minced garlic, chopped parsley, lemon juice, Worcestershire sauce, hot sauce, salt, and black pepper to the butter. Stir well to combine and remove from heat.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C). If using wood, ensure it’s well-seasoned.

  2. 6

Place Oysters on the Salt Bed

Arrange the cleaned oysters on the rock salt bed in the baking dish or tray, open side facing up.

  3. 7

    Add Butter Mixture

Spoon a generous amount of the prepared butter mixture over each oyster.

  4. 8

    Grill the Oysters

Carefully place the tray on the grill. Close the lid and grill for about 10-15 minutes, or until the oysters open and the butter is bubbling.

  5. 9

    Serve

Remove the tray from the grill. Let cool slightly before serving. Serve the oysters with extra lemon wedges and hot sauce on the side.
