    Prepare the Chocolate Mixture

    In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, cocoa powder, cornstarch, and salt. Whisk until smooth and well combined.

    Heat the Mixture

    Place the saucepan over medium heat and cook, whisking constantly, until the mixture starts to thicken and bubble, about 5-7 minutes.

    Add Chocolate and Vanilla

    Remove the saucepan from heat, and add the chopped dark chocolate and vanilla extract. Stir until the chocolate is melted and the mixture is smooth.

    Incorporate Egg Yolks

    In a separate bowl, whisk the egg yolks until smooth. Gradually add a small amount of the warm chocolate mixture to the egg yolks, whisking continuously to temper them. Then, slowly whisk the egg yolk mixture back into the saucepan with the chocolate mixture.

    Cook Again

    Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly until slightly thickened.

    Transfer to Molds

    Pour the budino into individual serving cups or ramekins. Allow to cool to room temperature, then refrigerate for at least 4 hours or until set.

    In a medium saucepan, add the mixed berries, granulated sugar, and lemon juice.

    Cook the Coulis

    Place the saucepan over medium heat and cook for about 10-15 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

    Blend the Coulis

    Remove from heat and let cool slightly. Transfer the mixture to a blender or use an immersion blender to puree until smooth.

    Strain (Optional)

    If desired, strain the coulis through a fine-mesh sieve to remove seeds for a smoother texture.

    Refrigerate the coulis until ready to use.

Whipped Cream

    Whip the Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract.

    Beat until Stiff Peaks Form

    Using an electric mixer, beat the mixture on medium-high speed until stiff peaks form, about 3-5 minutes.

    Serve

    Transfer the whipped cream to a serving bowl and refrigerate until ready to serve with the budino.
