Vegetarian Sausage Layer

Prepare Pasta

    Cook Lasagna Noodles

    In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

Make Cheese Filling

    Mix Cheese Ingredients

    In a mixing bowl, combine ricotta cheese, grated pecorino cheese, eggs, salt, black pepper, and chopped parsley. Stir until well blended.

Prepare Vegetarian Sausage Layer

    Sauté Vegetables and Sausage

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add crumbled vegetarian sausage, sliced mushrooms, and fresh spinach. Cook for 5-7 minutes until the vegetables are tender and the sausage is heated through. Season with salt and black pepper.

Assemble Lasagna

    Layer Ingredients

    Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce, then spread half of the ricotta cheese mixture over the noodles. Add half of the vegetarian sausage mixture, followed by a layer of marinara sauce and a layer of mozzarella cheese. Repeat the layers (noodles, ricotta, sausage, marinara, mozzarella). Finish with a final layer of noodles topped with the remaining marinara sauce and mozzarella cheese.

Bake Lasagna

    Bake and Serve

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden. Let it cool for 10 minutes before slicing and serving.
