Method
Preparation
- 1
Prepare the Tomatoes
Wash the fresh tomatoes thoroughly under cold running water. Remove the stems and cut the tomatoes into quarters.
- 2
Chop the Basil
Rinse the fresh basil leaves under cold water. Pat dry with a paper towel. Stack the leaves, roll them tightly, and slice them into thin ribbons (chiffonade).
- 3
Mince the Garlic
Peel the garlic cloves and finely mince them using a knife or garlic press.
Cooking
- 4
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- 5
Add the Tomatoes
Add the quartered tomatoes to the skillet and stir well. Cook for 5-7 minutes until the tomatoes start to soften and release their juices.
- 6
Season the Mixture
Sprinkle the salt and black pepper over the tomato mixture. Stir to combine and let it cook for an additional 3-5 minutes.
- 7
Add the Basil
Remove the skillet from heat and gently fold in the chiffonaded basil. Allow the residual heat to wilt the basil slightly.
Serving
- 8
Serve the Dish
Spoon the tomato basil mixture into serving bowls. If desired, top with freshly grated Parmesan cheese and serve with slices of crusty bread on the side.
