Toast the Baguette
Arrange the slices on a baking sheet in a single layer. Bake in the preheated oven for about 8-10 minutes or until golden and crisp, flipping halfway through.
Whipped Ricotta

Mix the Ingredients
In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt.

Whip the Mixture
Using a hand mixer or a whisk, whip the mixture until it is smooth and creamy. Set aside.

Combine Ingredients
In a saucepan, combine the fresh cherries, granulated sugar, red wine vinegar, and water.

Cook the Gastrique
Bring the mixture to a simmer over medium heat, stirring occasionally. Allow it to simmer for about 15-20 minutes, or until the cherries are soft and the sauce has thickened slightly.

Strain the Gastrique
Remove from heat and let cool slightly. Strain the mixture through a fine-mesh sieve to remove the cherry skins, pressing down to extract the liquid. Discard solids and set the gastrique aside.

Spread a generous dollop of whipped ricotta on each toasted baguette slice.

Arrange sliced fresh strawberries on top of the ricotta.
