Method

Cake Preparation

  1. 1

    Prepare the Dates

Chop the pitted dates into small pieces and place them in a bowl. Pour the boiling water over the dates and let them soak for about 15 minutes until softened.

  2. 2

    Cream Butter and Sugar

In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy. This should take about 3-5 minutes using an electric mixer.

  3. 3

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined.

  4. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. 5

    Mix Everything Together

Gradually add the dry ingredients to the butter mixture, alternating with the soaked dates (along with the water), starting and ending with the flour mixture. Mix until just combined.

  6. 6

    Bake the Cake

Preheat the oven to 180°C (350°F). Pour the batter into a greased and lined 9-inch round cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Toffee Sauce Preparation

  1. 7

    Make the Toffee Sauce

In a saucepan over medium heat, combine the unsalted butter and brown sugar. Stir until melted and combined. Gradually add the heavy cream and bring to a simmer. Cook for 3-5 minutes until the sauce thickens slightly.

  2. 8

    Serve

Once the cake has cooled, cut it into slices and drizzle the warm toffee sauce over each slice. Enjoy your sticky toffee cake!
