Pasta Preparation
- 1
Cook the Garganelli
In a large pot of salted boiling water, add the garganelli pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
- 2
Drain the Pasta
Once the pasta is cooked, drain it and reserve about 1 cup of pasta water for later use.
Shrimp and Sauce Preparation
- 3
Sauté Shrimp
In a large skillet over medium-high heat, heat olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the shrimp and cook until they turn pink and opaque, about 2-3 minutes on each side. Season with salt, pepper, and red pepper flakes.
- 4
Add Tomatoes and Wine
Add the halved cherry tomatoes and white wine to the skillet. Cook for about 4-5 minutes until the tomatoes start to soften and release their juices.
- 5
Combine with Pasta
Add the drained garganelli pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Stir in the chopped fresh basil.

Plate the Dish
Serve the shrimp garganelli hot, garnished with grated Parmesan cheese and lemon wedges on the side for squeezing over the pasta.
