Pasta and Clams
Sauce
Method
Preparing the Clams
- 1
Clean the Clams
Rinse the fresh clams under cold running water to remove any sand or debris. Soak in cold water for about 20 minutes, then drain.
- 2
Steam the Clams
In a large pot, bring about 1 inch of water to a boil. Add the cleaned clams, cover, and cook for about 5-7 minutes or until the clams open. Discard any that do not open.
Cooking the Pasta
- 3
Boil the Linguini
In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
Making the Sauce
- 4
Sauté Garlic and Spices
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant but not browned.
- 5
Deglaze with Wine
Pour in the dry white wine and bring to a simmer. Let it cook for about 2-3 minutes to reduce slightly.
- 6
Add Clams
Add the steamed clams to the skillet, tossing them in the sauce to coat. If desired, add some reserved pasta water to create more sauce.
- 7
Combine with Pasta
Add the drained linguini to the skillet with the clams and toss everything together. Season with salt and black pepper to taste.
- 8
Finish with Parsley
Remove from heat and stir in the chopped fresh parsley. Toss to combine.
