Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tbs) over the top and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (2 tsp). Make a well in the center and pour in the activated yeast mixture and olive oil (0.25 cups). Stir until a shaggy dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Form the dough into a ball.

  4. 4

    First Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

Shaping and Topping

  1. 5

    Prepare the Baking Dish

Grease a baking dish (approximately 13x9 inches) with olive oil.

  2. 6

    Shape the Dough

Once the dough has risen, punch it down and transfer it to the baking dish. Gently stretch and press the dough to fit the dish.

  3. 7

    Second Rise

Cover the dough again with a damp cloth and let it rise for another 20-30 minutes.

  4. 8

    Add Toppings

Preheat your oven to 425°F (220°C). After the second rise, use your fingers to dimple the surface of the dough. Drizzle olive oil (2 tbs) over the top. Sprinkle with fresh rosemary (2 tbs) and sea salt (1 tsp).

Baking

  1. 9

    Bake the Focaccia

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until golden brown.

  2. 10

    Cool and Serve

Remove the focaccia from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
