    Prepare the Beets

    Wash the fresh beets thoroughly under running water to remove any dirt. Cut off the greens and the root tip, leaving about an inch of the stem intact.

    Fill a large pot with 4 cups of water and bring it to a boil. Add the prepared beets to the boiling water. Cover and simmer for 30-40 minutes, or until the beets are tender when pierced with a fork.
