    Rinse 1 cup of quinoa under cold water. In a medium saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

    Chop Vegetables

    While the quinoa is cooking, chop the bell peppers, zucchini, and onion into bite-sized pieces.

    Cook Chicken

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, pepper, cumin, and paprika. Cook the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest before slicing.

    In the same skillet, add another tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant. Then add the shrimp, season with salt and black pepper, and cook for 2-3 minutes until they turn pink and are cooked through. Remove from heat.

    In the same skillet, add the chopped bell peppers, zucchini, and onion. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Add lemon juice for flavor and stir.

    In a large bowl, combine the cooked quinoa, sautéed vegetables, sliced chicken, and cooked shrimp. Toss well to combine all the flavors.
