Prepare the Milk
In a large pot, pour 4 liters of milk and gently heat it over medium-low heat. Stir occasionally to prevent the milk from scorching. Heat the milk to about 42°C (107°F). Use a thermometer for accuracy.

Add Rennet
In a small bowl, mix 1 teaspoon of rennet with 1 cup of cold water. Pour this mixture into the curdled milk and stir gently for about 30 seconds. Let it sit for another 5-10 minutes until the curds form and separate from the whey.

Cut the Curd
Once the curds have formed, use a long knife to cut the curd mass into small cubes, about 1 inch in size. Let the cut curds sit for another 5 minutes.

Cook the Curds
Gently heat the curds over low heat, stirring occasionally to prevent sticking. Maintain a temperature of around 38°C (100°F) for about 20-30 minutes until the curds are firm and squeaky.

Drain the Curds
Line a colander with cheesecloth and pour the curds into it to drain the whey. Sprinkle 1 tablespoon of salt over the curds and mix gently to combine. Let them drain for about 5-10 minutes.

Rinse and Store
Rinse the curds under cold water to remove excess salt and whey. Store the cheese curds in an airtight container in the refrigerator for up to a week. Enjoy your homemade cheese curds!
