Dough Preparation

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, semolina flour, and salt. Stir until well mixed.

    Incorporate the Eggs

    Make a well in the center of the flour mixture. Crack the egg into the well and add the water. Beat the egg gently with a fork, slowly incorporating the flour from the edges of the well.

    Knead the Dough

    Once the dough starts to come together, transfer it to a floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic. If the dough is too sticky, sprinkle with a little more flour as needed.

    Rest the Dough

    Wrap the kneaded dough in plastic wrap and let it rest at room temperature for about 30 minutes.

    Roll the Dough

    After resting, divide the dough into four pieces. Keep the pieces you're not currently using covered to prevent them from drying out. Roll one piece into a long rope about 1/2 inch thick.

    Cut the Cavatelli

    Using a sharp knife, cut the rolled dough into 1-inch pieces. To shape the cavatelli, use your thumb to press down on each piece and roll it off the edge of a wooden board or the back of a fork.

    Repeat the Process

    Repeat the rolling and cutting process with the remaining pieces of dough.

Cooking and Serving

    Boil the Cavatelli

    Bring a large pot of salted water to a boil. Once boiling, add the cavatelli and cook for about 3-5 minutes, or until they float to the top.

    Prepare the Sauce

    While the cavatelli cooks, heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Basil

    Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to blister. Stir in the fresh basil and season with salt and pepper to taste.

    Once the cavatelli are cooked, drain them and add them directly to the skillet with the sauce. Toss to combine. Serve warm, topped with grated Parmesan cheese.
