Clean the Calamari
Rinse the fresh calamari under cold running water. Remove the head and innards, then peel off the outer skin. Cut the calamari bodies into rings about 1/2 inch thick.

In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Coat the Calamari
Pour the buttermilk into a separate bowl. Dip the calamari rings into the buttermilk, allowing excess to drip off. Then, transfer them to the flour mixture, ensuring they are evenly coated.

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
