Dough Preparation

    Mix the Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Add the olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

    Transfer the mixture to a lightly floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Roast the Butternut Squash

    Preheat your oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for about 30-40 minutes, or until it's tender. Let it cool slightly, then scoop the flesh into a bowl.

    In a bowl, combine the roasted butternut squash, ricotta cheese, parmesan cheese, nutmeg, salt, and pepper. Mix until smooth. Set aside.
