Method

Crostini

  1. 1

    Prepare the Baguette

Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

  2. 2

    Toast the Crostini

Place the slices on a baking sheet. Brush each side with olive oil and sprinkle with salt. Toast in the oven for about 10 minutes, or until golden brown, flipping halfway through.

Oven Roasted Tomatoes

  1. 3

    Prepare the Tomatoes

In a mixing bowl, toss the cherry tomatoes with olive oil, salt, and black pepper until evenly coated.

  2. 4

    Roast the Tomatoes

Spread the tomatoes on a baking sheet and roast in the oven at 400°F (200°C) for about 15-20 minutes, or until they are blistered and soft.

Basil Oil

  1. 5

    Make the Basil Oil

In a blender or food processor, combine fresh basil leaves and olive oil. Blend until smooth. Season with salt to taste.

Assembly

  1. 6

    Assemble the Crostini

On each toasted baguette slice, place a piece of burrata cheese. Top with roasted tomatoes and drizzle with basil oil.

  2. 7

    Serve

Serve immediately while the crostini is warm and the burrata is creamy.
