    Cut the dark meat chicken into bite-sized pieces and season with salt and black pepper.

    Dice the onion, slice the carrot, bell pepper, zucchini, and snap peas. Set aside.

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
