Preparation

1. Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

2. Add Garlic and Zucchini

Stir in the minced garlic and diced zucchini. Cook for another 2-3 minutes until fragrant.

3. Add Green Beans and Tomatoes

Add the trimmed green beans, canned diced tomatoes (with juice), and vegetable broth. Bring to a boil.

4. Season the Soup

Stir in the dried oregano, dried basil, salt, and black pepper. Reduce heat and let simmer for 15 minutes.

5. Add Beans and Pasta

Stir in the rinsed kidney beans and small pasta. Continue to simmer for another 10-12 minutes, or until the pasta is cooked al dente.

6. Serve

Ladle the minestrone into bowls and top with grated Parmesan cheese if desired.
