1. Sauté Vegetables
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for about 5-7 minutes until the vegetables are softened and the onion is translucent.

Stir in the minced garlic and diced zucchini. Cook for an additional 2-3 minutes until fragrant.
3. Add Broth and Tomatoes
Pour in the vegetable broth and add the canned diced tomatoes. Stir to combine.
4. Season the Soup
Add the dried oregano, dried basil, salt, and black pepper. Stir well and bring the mixture to a simmer.

5. Add Green Beans and Spinach
Add the cut green beans and chopped spinach or kale to the pot. Stir to incorporate and simmer for 5 minutes.
6. Cook Pasta
