Method

Preparation

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 2

    Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

  3. 3

    Combine Tomatoes and Broth

Add the canned whole tomatoes (with their juice) and the vegetable broth to the pot. Stir well to combine.

Cooking

  1. 4

    Season the Soup

Add salt, black pepper, dried oregano, and sugar to the pot. Stir to incorporate.

  2. 5

    Simmer

Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20 minutes.

  3. 6

    Blend the Soup

Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a countertop blender.

  4. 7

    Add Fresh Basil

Stir in the chopped fresh basil leaves and let the soup cook for another 5 minutes.

Finishing Touches

  1. 8

    Add Cream (Optional)

If desired, stir in the heavy cream for a richer flavor and creamier texture. Heat through but do not boil.

  2. 9

    Serve

Taste and adjust seasoning as needed. Serve hot, garnished with additional fresh basil if desired.
