Preparation

Prepare the Chicken

Cut the dark meat chicken into bite-sized pieces and season with salt and black pepper. Set aside.

Make the Sauce

In a bowl, mix together the soy sauce, oyster sauce, sesame oil, cornstarch, and water. Stir until the cornstarch dissolves completely.

Chop Garlic and Green Onions

Mince the garlic cloves and chop the green onions into small pieces.

Prepare the Nuts

Roughly chop the almonds and cashews. You can toast them in a dry pan for extra flavor, if desired.

Stir-fry the Chicken

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry until browned and cooked through, about 5-7 minutes.

Add Garlic

Add the minced garlic to the skillet and stir-fry for an additional 1-2 minutes until fragrant.

Add Sauce

Pour the prepared sauce over the chicken in the skillet. Stir well to coat the chicken evenly and cook for another 2-3 minutes until the sauce thickens.

Add Green Onions and Nuts

Stir in the chopped green onions, almonds, and cashews. Cook for an additional minute to warm them through.

Transfer the Nutty Bird to a serving platter. Garnish with extra chopped green onions if desired and serve hot over rice or noodles.
