Method

Preparation of Steak

  1. 1

    Marinate the Steak

In a bowl, combine the tender steak with soy sauce and cornstarch. Mix well to coat the steak evenly. Allow it to marinate for at least 15 minutes.

  2. 2

    Prepare the Black Wood Mushrooms

If using dried black wood mushrooms, soak them in warm water for about 30 minutes until softened. Drain and slice them thinly.

Cooking the Mushrooms

  1. 3

    Sauté the Garlic and Ginger

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add minced garlic and ginger, and sauté for 30 seconds until fragrant.

  2. 4

    Add the Mushrooms

Add white mushrooms, shiitake mushrooms, and sliced black wood mushrooms to the skillet. Stir-fry for about 5-7 minutes until they are tender and browned.

Cooking the Steak

  1. 5

    Cook the Steak

Push the mushrooms to one side of the skillet, increase the heat to high, and add the marinated steak. Stir-fry for about 3-4 minutes until browned and just cooked through.

  2. 6

    Add the Sauce

Pour in the Dou-Ban sauce, rice wine, sugar, and broth. Stir everything together and let it simmer for another 2-3 minutes, allowing the sauce to thicken slightly.

Finishing Touches

  1. 7

    Garnish and Serve

Drizzle sesame oil over the dish, and garnish with sliced green onions and toasted sesame seeds. Serve hot over cooked rice or noodles.
