    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add diced onions, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened.

    Pour in the vegetable broth, add minced garlic, bay leaf, salt, and black pepper. Bring to a boil, then reduce to a simmer for 20 minutes.

    Finish the Soup

    Remove the bay leaf, adjust seasoning as needed, and serve hot in two bowls.

Appetizers

    Prepare Bruschetta Topping

    In a bowl, combine diced tomatoes, chopped basil, and olive oil. Mix well and season with salt and pepper to taste.

    Toast the pieces of bread until golden brown. Top each piece with the tomato mixture and sprinkle with grated Parmesan cheese.
