Soup

Prepare the Soup
In a large pot, combine the chicken broth, diced carrots, diced celery, diced onion, and minced garlic. Bring to a boil over medium-high heat.

Season the Soup
Once boiling, reduce the heat to low and add salt and black pepper. Let it simmer for about 20 minutes, or until the vegetables are tender.

Finish the Soup
Stir in the chopped parsley just before serving. Adjust seasoning to taste.
Rice

Cook the Rice
In a medium saucepan, combine white rice, water, and salt. Bring to a boil over medium-high heat.

Simmer the Rice
Once boiling, reduce the heat to low, cover, and simmer for about 18 minutes, or until the rice is tender and water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
Entrée

Prepare the Chicken Strips
In a bowl, season the chicken strips with salt and black pepper. Set aside.

Set Up Breading Station
In a shallow bowl, place flour. In another bowl, beat the egg. In a third bowl, place bread crumbs.

Bread the Chicken Strips
Coat each chicken strip in flour, dip it into the beaten egg, then coat it with bread crumbs. Repeat for all chicken strips.

Fry the Chicken Strips
In a large skillet, heat oil over medium-high heat. Once hot, fry the chicken strips in batches until golden brown, about 4-5 minutes per side.

Prepare the Spring Roll
Heat the spring roll according to package instructions, or fry until golden and crispy.
